Evaluation of MAP engineering design parameters on quality of fresh-sliced mushrooms

► Engineering MAP design considers product amount and packaging-permeability. ► Mushrooms have high respiration rate, thereby creating EMAP quickly. ► Equilibrium gas composition achieved was 3.6% O2 and 11.5% CO2. ► Cellophane™ film had water vapour permeability adequate for mushrooms. ► Optimised MAP design was obtained using 2 perforations for 110 g of sliced mushrooms.
