⺠Hazelnut skins are good source of bioactive compounds. ⺠Hazelnut fibre showed prebiotic activity toward two specific Lactobacillus spp. ⺠Polyphenol fractions exhibited antimicrobial effect. ⺠Hazelnut fiber revealed cryoprotectant properties in lyophilization process.
