Effect of different processing methods on antioxidant activity of underutilized legumes, Entada scandens seed kernel and Canavalia gladiata seeds

► Entada scandens and Canavalia gladiata seeds have high antioxidant potential. ► The proper conservation of seeds will reduce the dependence on conventional crops. ► Processing methods would not affect antioxidant activity of E. scandens. ► Dry heat enhance the antioxidant activity in C. gladiata. ► These processing methods will be recommended to prepare functional foods in the future.
